Mine go off in very slow traffic, or if I'm momentarily stationary in D or N and the car in front is close, or a car is moving slowly in an adjacent lane. I normally hit the "bugger off" button on the display but it comes back the moment you come to a slow crawl again.

Yep, same thing with mine. I have the 8" screen and my car may be MY18.5. It always worked like that in my car. Could be that there's some setting to turn off this auto activation but I never looked. It does come on a bit too often but since I run CarPlay 99% of the time now at least the parking sensor grapics don't come on. I just hear the beeping and the parking button on the dash illuminates so I just have to hit it if I want to silence them.

Try, the Settings icon, to access the Parking Aid Settings menu and unselect Automatic PDC On.
 
I know you said you want to tinker (cosmetic only), so get it up on a lift and get underneath to inspect the condition of the steel cross braces and subframes. They can be prone to rust. Best to get sorted sooner rather than later. Take a look at my post on the ‘what have you done to your F-Type today?’ thread to see the condition before and after of mine.
