Note there is a service missing, presumably due to COVID-19, and the last service was not registered properly so shows as overdue. Also missing details of other items, spark plugs, rear diff oil, etc

It has all software updates applied, H239 yes.
(You can decline software updates at a dealers, I do!)

Thank you, this is really great, gives me leverage as I'm talking to the dealer about it, it's a JLR dealer, but not approved used car and they're trying to fob me off that supercharger belt and spark plugs aren't needed, they've checked them and they're fine... According to their mechanic.
Is the diff oil something that comes up on the usual service schedule and is covered by usual service or is it like an extra thing? As in, is it due at a particular time or is it just when either the garage or customer says and then it's additional cost on that? And how often is that recommended? Thanks in advance

Rear diff oil is part of the service schedule, as is spark plugs, belts, brake fluid, front diff oil on AWD etc etc

Go to https://osh.jaguar.com.
Enter VIN
Click on Service Information.
Select the service required and click submit and it will list the schedule.

I can't see diff oil on the f type maintenance schedule, this is the one I'm looking at, is there another more detailed one I can use as reference?

The service schedule for mine (MY18) has rear diff oil change every 4 years. If you put your VIN into simpleR's link above you can see each service schedule for your specific vehicle (assuming you're in the UK).
